I wanted to export a graph to Excel, not as a image though. I wanted to be able to change its format, like colors and what's not.
Is that possible?

No. EViews cannot create Excel graphs.

However you can link an EViews graph into Excel, so that you can change the colours in EViews and the chart in Excel will update automatically.
