To answer your question about reverting an update... If you'd like to revert back each individual update, you'll have to make a copy of your EViews program directory (e.g. C:\Program Files\EViews 11) and save it somewhere before you run the automatic patch update. This way you can simply copy over the older files to revert.
There isn't an official way of reverting updates other than what you already did, but if you check your EViews temp directory (usually located at: C:\Users\<username>\AppData\ev_temp - you can run EViews and go to Options menu/General Options/File locations and click on the folder icon next to the temp path to open a window to this folder) you may find previously downloaded patch files that EViews last used. If you re-install one of these older patch files, you may be able to rollback everything properly. Patch files names end with the date in _MMDDYY format, such as EViews11x64Patch_122419.exe for Dec 24, 2019.

Ok, I've verified that the Dec 24, 2019 patch for EViews 11 broke the Excel add-in, but only for those using Office 64-bit. Office 32-bit users are fine.
I've confirmed that the new patch that will be released next week will fix this problem.
